Preparation:

  • Begin by preheating your oven to (190°C). Season the Chateaubriand generously with salt and pepper.

  • Sear: Heat a heavy skillet over high heat with a touch of oil. Sear the seasoned roast on all sides until a golden crust forms, typically 2-3 minutes per side.

  • Roast: Transfer the seared Chateaubriand to a roasting pan or ovenproof skillet and place it in the preheated oven. Roast until your desired level of doneness is reached, approximately 20-25 minutes for medium-rare (an internal temperature of 54-57°C).

  • Rest: Once done, remove the roast from the oven and let it rest for at least 10 minutes. This  step allows the juices to redistribute, ensuring a moist and tender result.

  • Slice: After resting, slice the Chateaubriand into thick, succulent portions. Serve immediately and enjoy
