AB Recommendation for the Picanha

1. Preheat your oven to 120°C.

2. Season the whole Picanha generously with salt and pepper. You can also add minced garlic for extra flavor.

3. In an oven-safe skillet, heat olive oil over high heat. Sear the Picanha on all sides until it develops a brown crust. This step is optional but adds extra flavor.

4. Place the Picanha in the preheated oven, uncovered, on a roasting rack inside a roasting pan. Slow cook for about 1.5 to 2 hours or until the internal temperature reaches your desired level of doneness.

5. Remove the Picanha from the oven and let it rest for 10-15 minutes. Resting allows the juices to redistribute.

6. Slice the rested Picanha against the grain into thin strips and serve.
