Espinaler Anchovy Fillets celebrate one of Spain’s great seafood traditions. Caught in the Cantabrian Sea during spring, when the anchovies are at their best, they are carefully matured in brine to develop their distinctive depth of flavour and beautifully tender texture.

Each anchovy is meticulously cleaned and filleted one by one, then packed by hand and preserved in olive oil. The result is a beautifully juicy fillet with an intense yet refined flavour and just the right balance of saltiness.
