Instructions:
1. Preheat your oven to 175°C.
2. Rub the crown roast of lamb with olive oil and season generously with salt, pepper, and any optional seasonings like garlic, rosemary, or thyme.
3. Place the crown roast in a roasting pan, with the rib ends pointing upward and forming a crown shape. You can fill the center with a choice of side dishes such as potato roast, and vegetable to help maintain the shape.
4. Roast the lamb in the preheated oven for approximately 25-30 minutes per 1.5 kg of meat for medium-rare.
5. Remove the crown roast from the oven and let it rest for about 10-15 minutes. This allows the juices to redistribute.
6. Carve the crown roast into individual chops or slices between the ribs and serve with your side dishes.
