FAB Style Instructions:

1. Heat a large, heavy pot or oven over medium-high heat. Add a bit of olive oil. Season the lamb shanks with salt and pepper. Sear the shanks on all sides until browned.

2. If desired, add chopped onions, carrots, and celery to the pot and sauté for a few minutes. Add any optional herbs and spices like rosemary, thyme, and garlic.

3. Pour in broth, or water to partially cover the lamb shanks.

4. Reduce the heat to low, cover the pot, and simmer for 2.5 to 3 hours or until the lamb shanks are tender. Stir occasionally and add more liquid if needed.

5. Once the lamb shanks are tender and the meat is falling off the bone, remove them from the pot. Serve the lamb shanks with the cooking liquid and vegetables as a sauce.
